Fillets from white tuna in extra virgin olive oil
Ventresca is called the part of the white tuna (Bonito del Norte) that is absolutely finest, it is mild in taste and very tender. Ventresca from Ortiz is made only on whole fillets from the tuna's stomach, these are packed in olive oil, sterilized and preserved.
Good in itself together with a piece of bread and homemade mayonnaise, feel free to turn the olive oil spatula into the mayonnaise for a clearer tuna taste. Good also for more exclusive tuna salad or "Ensaladilla Rusa".
About the manufacturer
From northern Spain, Conservas Ortiz has been fishing responsibly using traditional methods since 1891, but the history goes back to 1850 when Petra López de Aréchaga Nafarrate was born.
She married Bernardo Ortiz de Zarate and the two founded the company to work with canned food. After Bernardo's death, she ran the company and today it is the fifth generation in the same family that runs the company.
Conservas Ortiz works hard to build credibility around the catch. You want sustainable fishing but there are problems in the fishing sector. Conservas Ortiz is actively working to ensure that the species they catch continue to be renewed in the future. At the same time, care is taken not to harm other species during the day's work. Traditional fishing methods are therefore used as a fishing rod to catch tuna and nets to catch anchovies. Both are, among other things, dolphin safe.
